We found this one to be astonishingly medicinal. Pure notes of bandage, embrocations, gauze, hospital corridors, old style Dettol antiseptic, iodine and steely Fois Gras notes as well. With water it was still hugely medical but also showed notes of crushed sea salt, cider brandy, a fatty, visceral sweetness and horseradish. Also salt and vinegar crisps, pickled onions and some raw, earthy farmyard complexities. The mouth was huge and emphatic with tar liqueur, lashings of more medicine, peat oils, metal polish, rust, green peppercorns in brine and a fisherman’s oilskins. Reduction brought lemon curd, WD40, smoked pears, paprika, some dusty phenols, burning beach wood and a lungful of boiler smoke. Amazing!
