Please welcome our newest partner distillery in the US and let’s take a deep bourbon dive in the Pacific Northwest where our latest flavour adventure unfolds!

Located in Woodinville, Washington (just outside Seattle), the founders of Distillery B8 have been living a dream since 2010. With the help of the late great Dave Pickerell (of Maker’s Mark and Whistle Pig fame to name a few) to mentor them and of a Central Washington farm to go all-in and provide a truly grain-to-glass production process, that dream has become a multiple-award-winning reality. In June 2022, Team SMWS America went on a mission to the distillery and maturation facility at the Omlin Family Farm in Quincy, WA to taste and select three casks exclusively for SMWS America members.

All three casks released today were distilled in April 2017 and aged for 5 years before bottling. They share the same type of maturation (new American oak charred barrels) and same mash bill (72% corn, 22% rye, 6% malted barley)… but their bourbons are so different and highlight different aspects of the distillery style – confectionary sweetness, cabinet spice, complex savoury notes. Of course, each bottling carries the DNA of B8 and a core of maple, vanilla and chocolate notes, yet in each of the bourbons that follow, a unique version of this core expression clearly comes out. Cask No. B8.1 Last-minute thriller leads with ripe red fruits and baked goods for a slightly sweeter version of the style. Cask No. B8.2 Lazy lakeside picnics delivers the spiciness which is the backbone of the style with cinnamon, rye and peppermint spices taking the lead. Cask No. B8.3 Moonbeams and moonboots accentuates the savoury elements of dusty tannins, charred oak and black licorice.
