Notes

The nose, after an initial blast of new wooden furniture, eventually sweetened to maple syrup over banana fritters, rum and raisin ice cream, and stewed prunes in custard. The palate was a friendly punch in the mouth – dried coconut and chewed pencils, cinder toffee, syrupy rice crispy cakes and dark chocolate honey and almond nougat. With the reduced nose, we were stirring the tablet pot, while arranging maple and pecan pastries and chocolate-coated banana toffees on cane furniture. The palate, in reduction, suggested dark chocolate coconut bars and sweet Thai coconut curry, buttery raisin biscuits and lemonade, with nice spice in the aftertaste.
