The year of Scotch & Sherry continues! Our Distillery Dive series returns for a very sherried showing from the Speyside! We look at two US-exclusive single casks from Distillery #80 and juxtapose Spanish oak Oloroso and American oak Pedro Ximenez sherry maturations, a hand-picked flavour adventure just for you!
In 2019, SMWS Head of Spirit Creation Euan Campbell identified two casks from Distillery #80 that had been distilled from the same spirit run (on the same day) and aged in ex-bourbon hogsheads. After 11 years, the contents of each cask were transferred into different sherry casks for 4 years of additional maturation. The result is a decadent dichotomy of distillate that gladly welcomes sherry influence – both equally bold yet with stark nuance between them. Cask No. 80.49 Suave tannins was matured in a first-fill Spanish oak Oloroso hogshead, presenting spicy, nutty and leathery notes to complement the dried fruits and salted caramel indicative of this style of sherry. Cask No. 80.50 Be bold, be bravado was matured in a first-fill American oak Pedro Ximenez hogshead, boasting darker notes of dates, molasses, fig jam, dark chocolate and even a dash of tar sneaking into the expression. A brilliant pair offering equal measures of power and grace. Slàinte!
