About Suave tannins: This cask presents spicy, nutty and leathery notes to complement the dried fruits and salted caramel indicative of the Oloroso style of sherry. European oak offers a tighter grain, more nutty character and lots of color from the wood. Oloroso sherry is typically a dry style, so casks lend dried fruits, cabinet spices and lighter confection notes to whisky. 

Tasting Panel Note: This one certainly got the imagination of the Panellists going. One mixed a spiced balsamic plum shrub, while another was filling petrol into an off-road vehicle with a jerry can, and the third one sat in the library at a famous school for wizards and witches. Full-bodied on the palate, this was like a glass of barolo riserva, with figs, prunes and salted toffee. Water added a fruitiness on the nose yet it remained hefty, with flavours of balsamic vinegar, chestnuts, plummy chocolate and salted baked beetroot with feta and pickled onions. The voluptuous taste reminded us of black bun, clootie dumpling and smoked paprika. Following 11 years in an ex-bourbon hogshead, we transferred this whisky into a first fill Spanish oak oloroso hogshead.
