About Be bold, be bravado: Maturation in American oak PX presents darker notes of dates, molasses, fig jam, dark chocolate and even a dash of tar. Pedro Ximenez sherry is some of the sweetest produced and often introduces deeper confections and red berry fruits to whisky. The American oak lends vanilla and lots of barrel spice.
Tasting Panel Note: The nose kicked off with dates, sultanas, hot cross buns, treacle and muscovado, before veering towards apricot jam on croissants and gnarled old vine wood. The unreduced palate was intense, with dark sherry, cola cubes, pomegranate molasses and ginger marmalade, finishing with suggestions of coffee grounds, cigar boxes and razor strops. The nose had toffee apples, cranachan and cherry clafoutis with a demerara crust. The palate now had raspberry pieces in dark chocolate, fig jam, roasted nectarines and dried fruit, with hibiscus tea and tarry ropes on the finish. After 11 years in ex-bourbon wood, this was then transferred into a first fill American oak PX hogshead.
