The Speyside Coorie In bundle invites members to explore Scotland’s most prolific region. These three casks share the same age and barrel protocol so the stage is set to discover the aroma and flavour nuances of each cask through varied distillation processes. We start in the eastern reaches of the Speyside, where the River Deveron meets the Moray Firth. Cask 6.34 Boundless intemperance provides a balance between oily richness and bright fruitiness, with a good measure of earthiness to go along with it all - a multitudinous array of aromas and flavours due to several factors, notably the use of uniquely shaped stills and cold condensers. We head to the Speyside Lossie for a tropical tryst with Cask 85.56 Gentle and evocative. This fruit-forward profile is deliberate and results from several choices made in the distillery – namely a long fermentation and slow distillation process. With this tropical blitz of flavours comes a weightiness that provides texture and complexity, a result of worm tub condensation. Finally, Cask 80.12 Muesli mosh pit hails from the Speyside Spey and brings a very different profile to the fore. Cloudy wort yields a nuttiness to the expression and shorter fermentations produce earthy and malty flavours, instead of the fruity ones we’ve seen in the flight. A bold and spicy dram that will leave your palate singing. This flight is an excellent example of how distillation processes affect the resultant whisky’s character and can achieve tremendous complexity in the glass.
