Ginger squidgy 

Highland, Southern

The nose was initially sweet with vanilla syrup, jam-filled sponge cake with butter icing and things like chopped hazelnuts, smashed Hobnobs and digestives dunked in black tea. Some boozy trifle and warm notes of star anise and hessian sack cloth. Water brought refreshing notes of peppermint and cut grass. Impressions of a warm garden centre with lemon, kiwi and citronella candles. The mouth was full of bourbon spices, luscious papaya and ripe mango. Then corn on the cob slathered in butter, fresh ginger and paprika. Reduction brings vibrant fruit salad juices, honey, fresh oak, hard toffee and milk chocolate biscuits dunked in espresso. Some satisfyingly thick notes of ginger sorbet, elderflower and citrus zests.
