Embrace the extraordinary when discovering these unique Society casks from the Speyside and Highlands! This selection provides a rare opportunity to learn about the nuances between varied oak protocols. Cask No. 60.32 Springtime extravaganza gets us off to a spirited start with a profile that reminded the Panel of a chartreuse martini – spicy, herbal and with plenty of sweetness from a 1^st fill ex-bourbon hogshead. Cask No. 112.107 Tales of the unexpected garners honeyed vanilla character from a smaller, but equally active, 1^st fill ex-bourbon cask. Look for exotic tropical fruits and flowers on this stunner. We dial down the barrel activity and increase the distillate influence with Cask No. 113.71 Hothouse reverberation. A 2^nd fill ex-bourbon barrel still frames the palate with a hint of oak but the pastry, fruit and floral elements of this distillery style really shine through. Cask No. 68.85 Howling with delight is a great example of flavours derived from designer oak (heavy char #4). Exotic spices, baked goods and stone fruit desserts make a compelling sipper to pour over with your whisky-loving friends. Cask No. 44.145 Pilgrimage to El Rocio presents the dark and delicious world of sherry cask maturation in a 1^st fill PX hogshead. Syrups, singed citrus, maraschino cherry, Jamon Iberico and baking spices are just a few of the aromas and flavours you will encounter in this phenomenal dram.
