We found ourselves in the “rude and prickly bower” described by Robert Burns in his love poem, surrounded by “rosebuds in the morning dew”, emitting earthy sweetness, enticing wood spice and a prickle of gorse. On the nose comes to mind almond butter, old toffee penny sweets, dried banana skin and coconut husks. A medley of canned fruit syrups drizzled with condensed milk adds depth and fruity enticement, with an earthy wort sweetness as well. Water unveils limoncello, flying saucer sweeties, lemon bonbons and bramble bushes. Some molten butter on spelt bread adds an autolytic touch. The arrival in the mouth is rich and textural. Fat notes of tonka bean, parma ham, sea salt, melon balls and some immense, tongue-coating sweetness. Water adds soft mints, pink wafers and vanilla ice cream, cinnamon dusted caramel macchiato and the warmth of eucalyptus balm. Characterful distillate in a great cask, and a dram to treasure “amid life’s thorny path o’ care”.
