Tense mysterious suspense
Highland, Eastern
The scene was set - warming ourselves next to an autumn leaf Halloween bonfire with lightly charred grilled lobster rolls seasoned with peppered balsamic mayonnaise. On the palate neat, as dessert, we were served mulled red and black fruit compote combining cinnamon, cloves and plenty of fruity red wine such as Merlot. After a drop of water someone started to play Pink Floyds album "Dark side of the moon" and we clinked glasses with a very old, rare Palo Cortado Sherry enjoying well balanced flavours of balsamic, cigar ash, with notes of oak and smoke. After twelve years in an ex-bourbon hogshead we transferred this whisky into a heavy charred new oak hogshead.
