This was, unexpectedly, yet another textbook and stellar example of this make. It opened with lavender panna cotta, ripe peaches, nectarines and ripe monstera fruit. We found it to be wonderfully polished and exotic. Notes of precious hardwoods, exotic teas, beeswax furniture polish and sultanas stewed in aged cognac. A little water revealed tinned fruit salad, apple sweets, wee touches of medicine, aged plum wine, clove rock and honey dipped soda bread. On the palate we found an abundance of perfect aged characteristics. A whole library of ancient books, dunnage, earthen floors, long-aged yellow Chartreuse, an old fashioned and dried tropical fruits. With a splash of water we got a simmering and dancing spiciness, a touch of wood char and a warming cinnamon and nutmeg flavour.
