Notes

Imagine a posh brunch, with a sweet and fragrant start: baked pears flambeed in their own eau-de-vie served on top of a well caramelised crème brûlée with blackcurrant and bramble jams thinned with cherry liqueur. The flavour, while creamy at the start takes us in a savoury direction with bitter dark chocolate and toasted coconut. With a drop of water, the nose was revealed a sweet and savoury tapas assortment of dried cherries and honey baked apples with beef jerky and fine smoked meats. To finish, a taste of something sweet, with mellow umami overtones: salted caramel, prunes, and a zingy spiced chocolate to finish. Following nine years in an ex-bourbon barrel we transferred this whisky into a first fill heavy toast medium char barrel.
