A toasted stave

Speyside, Lossie

At first we got metal polish, herbal cocktail bitters, damp hessian and a lovely autumnal, leaf mulch vibe. Some fruitier tones of black cherries and maple syrup emerged over time. With water came tobacco, cough mixtures, old school medicines and butterscotch sweeties. The palate showed a wonderfully rich and dry profile of soot, waxes, toasted wood spices and dried herbs such as rosemary and lemon thyme. This medicinal aspect was still present too. Reduction brought more subtle flavours of heather ales, pumpernickel, mothballs and bitter orange marmalade. Previously in a bourbon hogshead for 9 yeas before transfer to a 1st fill toasted Caucasian oak barrique with toasted heads.
