Evocations of time and place

The nose evoked cottage kitchens – apple pie, jam tarts, raisins, honey and coffee – roses and heather moor-burn outside. The palate suggested baked pastries – and a classic sweet/smoke combination – burnt sticks, tar and light peat, balancing intense honey and candies; citrus and liquorice to finish. The reduced nose made one panellist nostalgic – for the south of France –sunflowers on a table, gooseberries and citrus fruits in a basket and geckos on a sun-warmed wall – we gave him hugs. The palate – provided balance, interest and promise – coastal bonfires at sundown. After 19 years in ex-bourbon wood, this was moved to a second-fill hogshead.
