About A pine tree in Paris: We finish with a return to ex-bourbon wood and an expression that transported our Tasting Panel to the perfume shoppes of Paris. This is an excellent example of the distillery style – a rare producer you likely haven’t tasted before!
Tasting Panel Note: Pine sap, pick 'n' mix and, very clearly, fine French perfume ... one more than four. Our palates found buttery caramel sauce, burnt honeycomb, a touch of lemon zest and rice paper. A late, but brief, appearance from chilli flakes faded to wood spice and banana. Water offered a warming from a cup of English breakfast tea on the nose, stirred with vanilla pods and a stick of mandarin taffy. The palate matched the nose, with a dry finish of spiced orange and grapefruit. Use water sparingly.
