Our senses were taken out to sea with tarry ropes, seaweed and oyster shells before a complex amalgamation of black olives, dried rosemary and fragrant tobacco suggested excitement lay ahead. Sweet phenols in the mouth moved between charred heather, charcoal and burnt pine nuts coated with honey while scorched lemon peel sat on singed toast with cinnamon. With water we were back with the dried seaweed at the harbour side but now with barbecued brambles, red liquorice and coconut ice cream dusted with chimney soot. Flavours moved towards dark chocolate on singed raisons with a mix of herbs that suggested medicinal cough sweets and a fresh breeze of menthol to finish.
