About On the side: The Welsh whisky created here comes from a unique still that emphasizes fruit richness and complexity. It was aged in a rarely seen Fino sherry cask that frames the fruitiness with savory notes from the dry sherry style. This is an exceptional effort from Wales’s most important distillery.

Tasting Panel Note: Have you ever dipped a biscuit rose de Reims into a glass of champagne? Well, if not this might be the closest you can get. On the palate, a mixture of the intense sweetness of the biscuit but also a citrus freshness with spikes of savoury notes made for an overall crisp experience with a hint of dryness. Following reduction, we found lavender, peppermint humbugs and freshly pressed sugar cane juice on the nose. The taste, cough bonbons with herbs from the Alps with fruity flavours and the chalky texture of Edinburgh rock. At two years of age, we combined selected casks from the same distillery into a variety of different casks to develop further. This is one of those casks.
