We found a profile unlike any other. White chocolate, peaches, pear juice and an almost  rum-like ester richness. One which yielded notes of fermenting bananas, fig chutney, pomegranate molasses, bandages, strawberry-accented old Jamaican rum, lemon barley water and funky mango syrup. We loved it immediately. With water we got white chocolate mice, rhubarb and custard sweets, lemongrass, elderflower wine, fermented tea leaf, mechanical oils, malt vinegar, anthracite, pine resin and WD40. The palate opened with pear drops, dunder, ester-drenched peaches, mentholated throat sweets, aromatic herbal bitters, natural tars, swollen spiciness and some rather bonkers esters. Reduction didn't make things any less barmy. Cherry cough medicines, jazzy herbal notes, cola syrup, red bean paste, marker pen, gooseberry tart and fermenting soy beans with miso-flecked dunder funk. Unhinged, steampunk genius!
