About Bilbao buns: Members have been pleasantly surprised by the casks coming out of Distillery 11, and with good reason. The distillate coming off the stills is sweet and fruity to begin with and more than half its life spent in Oloroso cask only deepens that decadent appeal. The cask lends just the right amount of savory notes to balance the profile for a rewarding sipper!

Tasting Panel Note: We flip-flopped along a hot beach towards a path of limestone cobbles. Wild fennel lined the way, dancing in the breeze and intercepting an air of Seville orange and raspberry jam. On the palate we found cherries, cortado, condensed milk, and date and plum purée, with a touch of wintergreen mint, finishing on a light, fresh note. Water added toffee, crème caramel in a leather satchel, huckleberry taffy and serrano ham to the nose, while the palate promoted vanilla, dark chocolate, char sui pork-stuffed bao buns, and black cherry jam. After four years in an ex-bourbon hogshead, we transferred this to a second fill oloroso hogshead for the remainder of its maturation.
