Cask No. 60.40 Fragile Youth is rich, echoing the sweetness of golden French toast, soaked in a butter custard with a touch of honey. As the flavour develops, warm caramel emerges, followed by a gentle peppery warmth that adds complexity without overpowering the sweetness.

The palate on Cask No. 6.72 Fruitful Endeavours is an indulgent blend of dark, velvety chocolate and fresh plum. As the flavour evolve, chocolate mellows into a creamier, sweeter profile, reminiscent of 72% milk chocolate, with layers of ripe raspberries to add a bright, refreshing edge.

Cask No. 66.249 Happily Ever After has an intense, smoky aroma rising immediately, reminiscent of smoked haddock over applewood embers. The smokiness is rich but nuanced, carrying a subtle hint of savoury sea air and brine. Beneath the smoke, simple syrup and honey drizzle across the palate.
