The future looks quite bright as well - they’ve gone back to floor maltings and direct-fired stills that will increase flavor even more than the bustling palate of flowers, tropical fruits and honey we see here.

Tasting Panel Notes
This was an intriguing mix of headiness and elegance, with aromas of acacia honey, creamed coconut, butterscotch tart, vanilla slices and rolling lavender fields in full bloom. It was sublime on the palate as we continued dreaming, now of a peach liqueur and raspberry jelly trifle, mango lassi, brioche soaked in honey and pinot gris, as well as orange blossom water. Following a drop of water, the “blemming blooming” just carried on, yet this time the scent was that of flowering, glorious gorse in Scotland as well as Japanese cherry blossom. The taste was silky smooth, as we found ourselves in another world, figuratively lying horizontal and dreaming of this dram.
