Gather in happiness this holiday season to share in the discovery of five unique single cask malts! This bright and lively quintet highlights the nuanced world of ex-Bourbon oak casks with brilliant examples from the Speyside and Highlands. Start with a dram to wake the palate up and prepare it for the cask strength expressions about to be experienced. Cask 1.211 Ironing a lemon is a ‘young & spritely’ malt that exemplifies the distillery’s make before it is (usually) put into sherry casks. Floral and citrus tones lead to a substantial palate with a backbone of malty cereal that forays into more exotic notes on the finish. Cask 46.81 A perfect parfait is of the ‘light & delicate’ profile and possesses a propensity for confection on the entry and finish with refreshing notes of tropical fruit revealed in between. Cask 122.27 Panna cotta, kilts and candlelight is a ‘sweet, fruity & mellow’ whisky and rarely seen unpeated effort from this distillery. Texture reigns supreme in this Highland dram with orchard fruits, hearty spice and vanilla on a sumptuous delivery. Cask 44.114 Sweet peas and toffee trees offers an entirely complex and rewarding look at the ‘spicy & dry’ flavour profile. Confectionary, herbaceous and nutty accents lead to terrific spice on the mid-palate and finish. We finish in the northern Highlands with the ‘oily & coastal’ Cask 52.28 Milking a Cowfish. Intense aromas of citrus, sea and soy before an equally intense palate of earthy, leathery and herbal notes makes for a fascinating iteration of this storied make.
