The nose exuded sweetness (toffee, muscovado, apple crumble), marmalade on toast and wood shavings; also hot cross buns, dried flowers and bacon fries. The palate was unctuously sweet (butterscotch, candy corn, crème caramel) with honey-glazed pork chops and whispers of wood spice (cinnamon toast, fennel seeds, turmeric). The reduced nose found slightly over-done pecan pie, spiced rum, quince jelly and antique libraries. The viscous, mouth-filling palate had maple syrup, bacon and pancakes; burnt toffee, ginger, liquorice, wooden tea chests and enough candy to satisfy a trick-or-treat mob. After 24 years in an oloroso butt we transferred this to virgin oak.

Drinking tip: A wee Halloween treat.
