Spiced vanilla cake, swirling toasty oak, coconut-dusted snowballs, cinnamon pastries and maple pecan Danish. Then comes gingerbread, vanilla icing and a scattering of dark fruits soaking in armagnac. Water brings out Battenberg cake, bananas flambeed with rum, toasted oak, cocoa nibs and chalky old schoolroom cupboards full of jotters. The mouth is superbly mellow and honeyed. Lots of dried cranberries, creme anglaise, butterscotch and poached pears. Impressions of well-aged bourbon. With reduction there's more gooey delicious vanilla in the form of vanilla ice cream milk shake and tonka bean ice cream. Belgian waffles with melting butter and icing sugar, then orange caramel sauce and stewed sultanas.
