Neat, the initial nose was like fire and earth, hot embers glowing in a wood burning stove before fruity aromas of plums and prunes appeared. On the palate an oak-fermented Chardonnay – toasty with notes of quince and satsumas plus plenty of pepper spice in the finish. With water the cosy scent of hot mulled wine made with oranges, brandy as well as cinnamon and ginger, was followed by still fairly bold oaky flavours and plenty of spice. All now seamlessly balanced by a sweet creamy coconut texture. After nine years in an ex-bourbon hogshead we transferred this whisky into a 2nd fill coarse grain toasted French oak barrique.
