Toasty and inviting aromas embraced roasted chestnuts, crushed cereals, and walnut bread while hints of soot and charred oak mixed with applewood smoked bacon and seaweed on peated barley. The palate was sweet with biscuits, shortbread and burnt toffee. Then dried herbs and spinach joined toasted pine nuts and smoked duck with beef jerky. Wish a dash of water came burnt heather, lavender, and rhubarb crumble while liquorice and fennel seeds merged with melting butter on smoked kippers. Finally charcoal and burnt toast combined with the rich sweetness of honey glazed ham, maple syrup on bacon and a touch of citrus on the finish.
