About Big stave: Welcome to “Big Stave Country”! The mellow distillate that typically yields light vanilla and orchard blossom has been lit up with a heavily charred cask – bold and beautiful barbecue, brown sugar and dark chocolate. Nothing typical about this malt!

Tasting Panel Note: A rich and robust profile included initial notes of paprika, freshly sawn hardwoods oozing resin, barbeque embers, orange blossom, physalis and caramelised oak sugars. We felt it was giving off strong "guilty pleasure energy". Water brought impressions of polishing rags, metal polish, cocoa powder, chai tea and nutmeg. The neat palate was wonderfully creamy and fatty in the mouth, with a nicely easy tannin structure and plenty of liquorice, spicy barbeque sauce and vanilla cream flavours. Some reduction brought caramelised brown sugar, custard and sweetened almonds, plus toasted fennel and chilli-infused dark chocolate. After maturing in a bourbon hogshead for 13 years, this was transferred to a first fill heavily charred #4+ hogshead.
