About Faire chabrol: Cask No. 135.66 ‘Faire chabrol’ is a lead character in The Odd Team. To create this whisky, we decided to use a designer cask that is unlike anything we’ve used before. The result is A LOT going on in the glass. It’s an elegant, layered, and thought-provoking dram. The kind of whisky that reminds us of why we love whisky to begin with. 

Tasting Panel Note: The nose held orange marmalade, apple strudel, plum brandy and port-soaked raisins, with sweeter enticements of vanilla ice cream, fudge and caramel. The palate echoed that with blackcurrant sorbet, tinned peaches, a maple and pecan danish, and doughnuts dipped in cinnamon sugar. In reduction the nose delivered dried pineapple, a rocky road ice cream float and ‘faire chabròl’ with hot chocolate. On the palate now we got the boozy fruits of pineapple juice with pastis and orange peel in sangria before finishing with molasses, tropical trail mix and hints of pepper and star anise. This spent 12 years in ex-bourbon wood, before being transferred into a first fill toasted barrique.
