We found peach stones and dried apricots at first. Followed by light and fresh tropical fruits, plink marshmallow, plum wine, herbal resins, red liquorice, quince jelly and mandarin peel. A little water brings out pastis, almond oil, toasted pistachios, lemon balm, soda bread, fruit loops and a heathery fragrant side along with some subtle aged armagnac notes. The mouth is richly fruity with notes of redcurrants, star anise, cinnamon buns, apricot jam, Edinburgh rock and cornflakes dusted with icing sugar. With water there’s green banana, pineapple jelly, vanilla milkshake, pink grapefruit pith, lime sorbet, crushed aspirin, childrens medicine and pears drizzled with rosewater. Matured for 10 years in a bourbon hogshead before transfer to a 2nd fill chenin blanc barrique.
