We noticed a bouquet of grassy, earthy and malty aromas reminding us of chocolate hobnobs, malted milk biscuits, dried heather, freshly cut hay and wild thyme Greek honey. On the palate neat a sweet Thai lemongrass and pandan iced tea with cracked black pepper oatcakes and dark chocolate coated ginger biscuits. Water added a granola yoghurt parfait with fresh kiwi and pomegranate as well as refreshing, rich, fruity hop notes with a hint of honeysuckle. To taste a slice of apple and pear tart topped with a rum and star anise glaze while in the finish an orange studded with whole dried cloves cured in fragrant spices – pommes d’ambre, a medieval perfume.
