A surprisingly phenolic scent was awaiting us as we imagined visiting a tobacco plant when caught in a sudden heavy downpour; we sought shelter in a hut. Some of us lit cigarettes, whilst others snacked on roasted hazelnuts, but we all noticed the sweet, wet earthy aromas rising from the ground. On the palate we had savoury mashed sweet potato and orange syrup almond cake. After we added a little water we were transported to the vineyards of Champagne where we enjoyed barbequed sardines in a Moroccan chermoula marinade using fresh herbs, cumin, garlic and olive oil.
