Notes

The neat nose revealed creamy, sweet peat smoke, with hints of salty old sherry sloshing about in the depths. A perfect fusion we felt, one which balanced the briny, lemony distillery character with the richness of balsamic glaze and bacon jam coming from the cask. Water revealed kippers, iodine, camphor and some lovely herbal ointments. The palate suggested smouldering hardwoods up front, with resinous fir wood, natural tar extracts, pickled walnuts and smoked game meats. The Panel agreed it retained a charmingly old-school edge. Water enhanced the rich and sweet layers of peat flavour, with salty and sweet sherry notes mingling underneath. In the aftertaste we found salted liquorice and unlit cigars. This was matured in a bourbon hogshead for 10 years before being transferred to a first fill American oak oloroso hogshead, seasoned for three years.
