Notes
The nose evoked over-toasted marshmallows, marzipan at the cigar smokers’ table, burnt heather and a sugar factory ablaze. The palate deliciously combined smoke and sweet sherry notes – chimney scrapings were mixed with honey, sweetie cigarettes in a real ashtray and seared scallops flambéed with brandy. The reduced nose was a perfect beach barbecue, with tarry driftwood, salmon, prawns wrapped in jamon and a leather shoe a bit too close to the fire. The palate now combined humbugs, cheroots and strong lapsang souchong tea. After six years in ex-bourbon wood, this was moved into a second fill oloroso hogshead – wicked stuff!
