The gourmand maltster


Have you ever raked sprouting barley on a malting floor while next door the green malt was being dried in a kiln using peat? If not – the aroma neat will get you as close as you can be without actually being there. On the palate, a ‘melt-in-your-mouth’ smoked confit of duck and caramelised figs with balsamic vinegar. With water the scent of Kalamata olives, capers, singed thyme and smoky pear drops while the taste was that of a peaty breakfast; sweet smoky cereal, cloudy apple juice, pink grapefruit and smoky cinnamon clove syrup on thick and fluffy American-style smoked bacon pancakes.
