This wee maritime beauty opens with notes of tidal-fresh rock pools and all the usual suspects of tar, ash, soot and lashings of medicine alongside a curious and compelling fragrance of blackberry jam. Water brings forth lively kippers, burlap sack, pear soap, a slightly tarry bitterness and some pretty serious peat. To taste there are stewed apples, sugary tea, intense black coffee, chillies and white pepper. Liquorice, dandelion and burdock and Fisherman’s Friend menthol lozenges all make notable cameos. Reduction makes things ashier and bittersweet with notes of burnt seaweed, twiglets and tarte tatin. The panel found this one simple but hugely enjoyable.
