A burst of fruits to start with, tangerines, apples, gooseberries, Valencia oranges and cantaloupe melon but at the same time the herbal salty aroma of sea salt blended with rosemary, sage and oregano. On the palate neat there was some fresh citrus mixed with the herby salt and we enjoyed grilled scallops in a lemon-herb drizzle. Water added the elegant tartness of grapefruit marmalade on toast with salted butter. To taste a kale and pink grapefruit salad seasoned with extra-virgin olive oil, herbal lemon salt and black pepper gave it vibrancy and freshness, but at the same time plenty of depth and texture.
