An immediately luscious note of peaches and cream, sautéed apricots, orange liqueur, fig compote, prune juice, dried flowers, cherry syrup, cranberry sauce, fresh espresso, cocoa powder and elegant rancio. Water moves things towards rum, olive oil, dried sultanas, bicycle inner tube, crystallised ginger, banana bread, walnut oil, mustard seeds, chocolate orange, fermenting lemons and digestive sweetness. The palate is surprisingly fulsome given the triple distillation. Lots of cough medicine, black pepper, leather, wood spices, dried stone fruits, panna cotta, creme caramel, strawberry jam, dark fruit chutney, flapjack and mint chocolate chip. With water this moves towards bitter dark chocolate, old balsamic, pecan pie, raspberry cordial, elderflower champagne, rose petals, Turkish delight, blueberry muffins and toasted oak. Previously in a bourbon hogshead for 15 years before transfer to a 1st fill oloroso hogshead.
