A beautiful and generous sweetness, we thought. Youthful dessert wines, runny honey, wildflowers, lemon barley water and Juicy Fruit chewing gum. In time, a firmer earthy quality emerged: snapped twigs and old potting sheds. Reduction gave us a lovely heathery note, with earthy turmeric, dried flowers, starched linens and waxy parchment. The neat palate was initially very bready and rich in texture. Lots of lanolin, fresh baked brown bread, pumpkin seed oil, sawn hardwoods, orange cocktail bitters and new leather. With water, more soothing notes of spiced shortbread, umami bouillon stock, pollen, miso, camphor and heather ale all emerged.
