Tasting Panel Note: Butter melted as it swirled in a mug of hot cocoa, served with a sprinkle of coconut flakes and a chunk of cinder toffee. Fruity notes then met fine oils from dried pineapple and waxy apples merging with Iberico ham. Rich flavours on the tongue soothed the soul; pork cheeks braised in sticky Pedro Ximenez sherry arriving alongside vanilla sponge cake, juicy raisins and brown sugar-topped pears poached in Amarone red wine. Water released a cacophony of pleasing spices, the Amarone now mulling with fig syrup, cinnamon and oranges. The umami textures of miso soup subsequently blended into stewed rhubarb before a sweet finish embraced salted caramel, rum and raisin ice cream, and almond honey shortbread. After spending 14 years in an ex-bourbon hogshead this was transferred to a first fill American oak Pedro Ximenez hogshead for the remainder of its maturation.
