Rounded yet entertaining aromas delivered jammy fruits wrapped in vanilla icing and sprinkled with cinnamon and nutmeg. Apricot tarts and marmalade joined creme caramel before coconut husk veered us towards fine oak. The first sip was intense, an explosive kick of scotch bonnet chillies, cinnamon stick and pickled ginger after which appeared spiced apple chutney, orange liqueur and fresh coconut. Water brought creamier notes on the nose as buttery hues merged into burnt caramel, toffee and butterscotch. Then cocoa beans and vanilla custard formed around dark chocolate with apples, pears and crystallised pineapple. The palate still grappled with a tingly warmth that became overshadowed by a huge kick of coconut. Mango followed onto a finish that embraced spicy rye bread with mouth-coating oils and pencil shavings.
