This single malt (not single cask) was transferred into a first-fill bourbon barrel after seven years. The nose displayed custard Danish, lemon curd, toffee and perfumed pear, hints of heathery smoke and a suspicion of seared scallops. The palate started fresh and lively, but settled down to honeyed viscosity, ice-lolly sticks and toffee apples. Smoked spiced nuts appeared on the lingering finish. The reduced nose turned more maritime – reminding us of emerging from the surf with fresh, salty skin tingles. The palate mellowed to lip-smacking nutty chocolate and sarsaparilla sweetness, sugar-coated fennel seeds, burnt heather sprigs, lightly smoked salmon and Lapsang Souchong.
