At six years of age, we combined selected casks from this distillery. We then returned the single malt into a variety of casks to develop further. This is one of those casks. The nose starts by a hillside croft garden bonfire, before heading down the heathery herbal slope towards the shore where someone is drizzling lemon over sizzling prawns. The palate is sweet, smoky and slightly boisterous; coffee and carrot cake, perfumed cigar smoke, salty pretzels and licking beach pebbles; the finish suggests ginger and beach bonfire ember heat. The reduced nose finds dried seaweed, barnacles on a wooden hull, sea breezes over the machair and a wood-burner in a coastal bothy. The palate now gets bourbon, root beer and vanilla, lemon sweets, chilli, oak and smoke.
