Tasting Panel Notes

The nose gave us lightly perfumed Marseille soap, laundry and shaved wood; we also found honeycomb, hay, lemon meringues, jellybeans and apricot danish pastries. The complex palate combined cinder toffee and raspberry or cherry jam with lemon peel; then liquorice allsorts and pretzel sticks, before we chewed green twigs dipped in honey to finish. The reduced nose was sweet and perfumed – candy floss and marshmallows, rose Turkish delight, a milk chocolate-covered fudge bar and pine or cedar wood. The palate teased us with chocolate-coated caramel, toffee apples and golden syrup; while the mildly spiced finish had hot cross buns, birnbrot and black tea with lemon.
