Zing like the ping of a musical string

Speyside, Lossie

The nose is sweet and zesty – pineapple humps, lemon drizzle cake, green apple, sherbet lemons – a citric zing, sharp as the ping of a mandolin string – but also perfumed and fresh, like yellow roses and daisy meadows. The unreduced palate has layers of complexity – lemon bonbons, stewed apples in the pan – lemon zest and sorrel bitterness – plasticine and Play-doh waxiness – coconut and tobacco depth and pleasant eucalyptus after-tingles. The reduced nose is uplifting and poignant, like zephyrs shimmering the leaves of a lemon grove; sharp as the pain of love. The reduced palate synthesises everything – bitter-sweet, mouth-tingling lemon drops of pleasure.

Drinking tip: To enjoy while sailing on a light breeze, under a companionable sun.
