Caramelised fruit and nut medley
With boundless depth and incalculable complexity we were ecstatically greeted by caramelized pineapple, nectarine, dried cranberries, whipped cream with raspberries and peach and vanilla ice cream. A divine nuttiness progressed with toasted almonds and roasted hazelnuts before exploding into crème brulee, apple strudel, pain au chocolat and toasted marshmallows accompanied by a glass of kirsch. “I would refuse to put water in this”, one panelist pronounced as they beamed with multi-sensory gratification. The texture was silky yet viscous and laden with spicy oak, caramel, cocoa nibs, hazelnut chocolate and a light mineralic saltiness on the elegant and dignified finish.
