Notes
The neat nose brimmed with aniseed, black bean curd, clove oil and mushroom powder. We all agreed it possessed a superb umami and savoury richness, with lots of dense tobacco notes, some red fruits, burnt brisket and black liquorice. Water brought out more playful notes of chocolate-coated raisins, raspberry cordial and scented hardwood resins. The neat palate had lots of medicinal fruity cough lozenge vibes up front, then orange travel sweets, dried cranberries and touches of sage and onion gravy. With water it revealed softer red and dark fruit notes, along with aged armagnac, heavy wood spices and big notes of bitter dark chocolate and prunes. At 10 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
