A study in sepia, chestnut and umber – the nose suggested brown sugar melting in a pan, cinnamon, cocoa nibs and fudge – then autumn leaves, hessian and damp earth. The palate wasn’t far away in terms of colour tones – brown sauce, earthy smoke, seared scallops, kippers fresh from the smoke-house and molasses. Adding water we nosed a pile of lobster creels on the harbour, a bonfire of wooden pallets (or freshly charred cask staves), waxed lemons, putty and magic balloons. The reduced palate brought in new notes of menthol, eucalyptus, nettles and ferns, and a Bavarian picnic of smoked pigeon and rauchbier.
