Distillery 100 is the most photographed in all of Scotland, and with good reason. It has everything we romanticize distilleries to offer. What’s created inside is equally romantic especially when it’s kissed by Australian Shiraz casks. These maturations can sometimes be overdone, but the balance here is remarkable.

Tasting Panel Notes

The gentle nose gave grapes balanced on popcorn, raspberries atop candy floss and orange peel on lilies. The palate was mouthwatering and rich, full of exotic fruits, whipped ice cream, French toast, strawberry syrup and chewing tobacco plucked from a leather pouch. Water added honey to the nose, along with strawberry candy, lavender and lilac, peach melba and rosewater. In a long, dry finish on the palate, the Panel collectively found black tea, fennel and cardamom. After seven years in an ex-bourbon hogshead, we transferred this to a first-fill shiraz hogshead for the remainder of its maturation.
