For those who are not familiar, Papassini is a Sardinian cookie filled with spices and raisins. Maturation in Bodega Ximenez-Spiñola’s PX barrique frames the distillate perfectly and clearly inspired our Tasting Panel to enjoy some Italian Christmas cookies in the glass.

Tasting Panel Notes

We started off by dipping warm panettone in madeira, with a side of brandy snaps stuffed with aromatic orange fondant. Like the nose, the palate was rich and sweet with a texture to match. A touch of paprika and cappuccino followed. Water stirred a glass of spiced cola with fennel and a stick of marzipan, and we could taste Sardinian papassini biscuits, glacé cherries and blackcurrant syrup. After 12 years in an ex-bourbon hogshead, we transferred this to a first fill ex-bodega PX barrique for the remainder of its maturation.
