For those who are not familiar, Papassini is a Sardinian cookie filled with spices and raisins. Maturation in Bodega Ximenez-Spiñola’s PX barrique frames the distillate perfectly and clearly inspired our Tasting Panel to enjoy some Italian Christmas cookies in the glass.

Tasting Panel Notes

The very intense scent almost overwhelmed us. We entered a joiner’s shop and found a mixture of aromas including wood shavings, glue and paint next to warm sand, coconut oil and treacle. Intense and smouldering on the palate, we found heavily brewed black chai aromatic herbal tea with ginger and cinnamon yet with a surprising menthol finish. After a drop of water, the joiner showed us chisel carvings on an exotic wood statue while a whiff of honey-roasted sweet potatoes, turnips and parsnips reached us from the kitchen. We enjoyed those alongside sautéed carrots with lemon and marjoram. Following 13 years in an ex-bourbon hogshead, we transferred this whisky into a first fill heavy charred hogshead.
